Instructions
Remove any fat from the chicken breasts and cut into cubes.
Place 1-2 tablespoons olive oil into skillet and heat up. Add chicken and cook till no longer pink inside. Remove the chicken from the pan.
Add another tablespoon or two of oil to the pan
Open both bags of frozen oriental vegetables and put one full bag and half of the second bag into the pan. Stir vegetables to get them coated with the oil.
Turn heat down and cover the pan. Stir about every 5-8 minutes. When vegetables are about cooked add chicken back in. Add pineapple chunks to the pan. Pour sauce over the mix and stir.
Cook uncovered for 5-8 minutes or until liquid has cooked down.
