Oriental Chicken Stir Fry

  • 12" skillet


  • 2 Chicken breasts
  • 2 bags Frozen oriental vegetables
  • 1 can Pineapple chunks in juice, drained Save the juice to drink
  • 2-3 Tbsp Olive Oil
  • 1 bottle Lawry's Teriyaki with Pineapple Juice Marinade


  • Remove any fat from the chicken breasts and cut into cubes.
  • Place 1-2 tablespoons olive oil into skillet and heat up. Add chicken and cook till no longer pink inside. Remove the chicken from the pan.
  • Add another tablespoon or two of oil to the pan
  • Open both bags of frozen oriental vegetables and put one full bag and half of the second bag into the pan. Stir vegetables to get them coated with the oil.
  • Turn heat down and cover the pan. Stir about every 5-8 minutes. When vegetables are about cooked add chicken back in. Add pineapple chunks to the pan. Pour sauce over the mix and stir.
  • Cook uncovered for 5-8 minutes or until liquid has cooked down.
  • Serve with rice and enjoy.
