Mom's Lasagna
The kids and grandkids always ask me to make this for them. Homemade meat sauce, and lots of cheese!

1 17x12" pan
1 Large stock pot
- 2 lb Ground chuck or Ground round
- 1 large Onion
- 4 cloves Garlic
- 2 6 oz cans Tomato paste
- 2 28/29 oz cans Crushed tomatoes
- 2 28/29 oz cans Tomato sauce
- 3 tbsp Italian seasoning
- 1 tsp Salt
- 1-2 pkg Oven ready lasagna noodles
- 2 15 oz cartons Ricotta cheese (or cottage cheese)
- 2 Eggs
- 3 tbsp Sugar
- Grated parmesan cheese
- 2 16 oz pkg Shredded mozzarella cheese
Sauce (use large stockpot)
Mince onion and garlic and sauté until soft. Remove from pan.
Brown ground beef and drain grease off.
Add onion and garlic.
Add tomato paste and 4 cups of water. Mix until blended
Add crushed tomatoes and tomato sauce plus 3 tbsp sugar.
Add the 3 tbsp Italian seasoning plus salt and pepper to taste. Don't over season. After the sauce has cooked for several hours taste and add more if needed.
Cook sauce over low heat for two hours. Stir frequently so it doesn't burn.
If the sauce seems too thick add additional water. The lasagna noodles will absorb quite a bit of water.
