Mom's Lasagna

The kids and grandkids always ask me to make this for them. Homemade meat sauce, and lots of cheese!

Equipment

  • 1 17x12" pan
  • 1 Large stock pot

Ingredients
  

  • 2 lb Ground chuck or Ground round
  • 1 large Onion
  • 4 cloves Garlic
  • 2 6 oz cans Tomato paste
  • 2 28/29 oz cans Crushed tomatoes
  • 2 28/29 oz cans Tomato sauce
  • 3 tbsp Italian seasoning
  • 1 tsp Salt
  • 1-2 pkg Oven ready lasagna noodles
  • 2 15 oz cartons Ricotta cheese (or cottage cheese)
  • 2 Eggs
  • 3 tbsp Sugar
  • Grated parmesan cheese
  • 2 16 oz pkg Shredded mozzarella cheese

Instructions
 

Sauce (use large stockpot)

  • Mince onion and garlic and sauté until soft. Remove from pan.
  • Brown ground beef and drain grease off.
  • Add onion and garlic.
  • Add tomato paste and 4 cups of water. Mix until blended
  • Add crushed tomatoes and tomato sauce plus 3 tbsp sugar.
  • Add the 3 tbsp Italian seasoning plus salt and pepper to taste. Don't over season. After the sauce has cooked for several hours taste and add more if needed.
  • Cook sauce over low heat for two hours. Stir frequently so it doesn't burn.
  • If the sauce seems too thick add additional water. The lasagna noodles will absorb quite a bit of water.

Filling

  • After the sauce is done mix together ricotta cheese, eggs and 1 tbsp Italian seasoning.
